Our chefs are native of the region where you are located for your vacation, when possible. So they will always propose you regional menus being respectful of the typical products and dishes.
Italy is beatiful and various. Once here, you will find out more than one. Before being Italians people are Tuscans, Sicilians, Romans, Umbrians...
Let your chef suggest the best menu both for seasonal and regional reasons.
Do not expect from them a Linguine al pesto dish if you are in Sicily for example! Maybe it is better if you ask for a dish of caponata! ;-)
Seasonality and Organics
You can have the best chef but he/she is nothing without the freshest ingredients.
We have a selection of suppliers able to give us best regional products, grown with care in chemical-free soil. So if you are in the Venice area you will have the best “radicchio trevigiano”; if you are in Amalfi coast you will have the best lemons and fresh mozzarella cheese. In Tuscany or in Umbria you won’t miss the wonderful farmers vegetables like tomatoes, zucchinis, artichokes… all of this assures our clients the most flavourful and beautiful food for their meals.
Our personal chefs know personally each farmer and supplier and they have strong relationships with them.
If you can, why don’t you take a morning following your personal chef to see how he/she deals with suppliers in a local market!
Last but not least… Do not expect from us mushrooms in July or a summer dish like Panzanella in January: Can you imagine how does it taste?
